Easy Spinach Artichoke Pasta Recipe 

Its silky cream sauce, fresh spinach, and tangy artichoke hearts make it a simple, comfortable midweek supper that will become a staple.  

– 8 ounces penne – 2 tablespoons olive oil – 5 ounces spinach  – 1 cup artichoke hearts  – 8 ounces cream cheese – 1 tablespoon garlic powder – ¼ teaspoon salt  – ¼ teaspoon pepper  – 2 cups milk  – 1 cup mozzarella cheese – ¼ cup Parmesan cheese



Cook the pasta first, following the directions on the package. As the pasta cooks, get the sauce ready.   


Before heating the olive oil, place it in a Dutch oven or a big saucepan and set the heat to medium.  


Cook the spinach until it has wilted for a few minutes. Cook for one more minute after adding the artichoke hearts to the casserole.  


Put in the cream cheese and whisk it until it is completely melted and there are no lumps left.  Add the garlic powder, salt, and pepper, and stir to combine.   


After adding the milk, continue to cook it while stirring it occasionally until it reaches a boil.  


Followed by the addition of the pasta, stir in the mozzarella cheese and continue to mix until the pasta is equally coated.  


Garnish with grated Parmesan cheese, and serve while still quite warm.
