Best Easy Tortellini Soup Recipe 

Creamy tomato soup, cheese tortellini, spicy Italian sausage and fresh veggies and spices make this Tortellini Soup delicious. 

– 1 tablespoon olive oil – 1 pound Italian sausage – 1 medium onion – 1 medium carrot – 2 stalks celery – 4 cloves garlic – 1 tablespoon Italian seasoning – 1 teaspoon salt  – ½ teaspoon pepper – ¼ cup all-purpose flour – 6 cups chicken broth – 14.5 ounce fire roasted tomatoe – 2 cups tomato passata – 14 ounce cheese tortellini – 2 cups half and half – 1 cup fresh spinach



In a large Dutch oven, heat olive oil on medium. Break up the Italian sausage with a wooden spoon and brown for 3–5 minutes.  


Put onion, carrot, and celery in the skillet and simmer for 5 minutes, turning periodically, until tender.  


Stir garlic, Italian seasoning, salt, and pepper into the pot. Stir to avoid burning for 30 seconds until garlic releases its fragrance.  


Put flour on everything and whisk. One minute, stirring periodically.   


After adding the fire-roasted tomatoes and tomato passata, gradually pour in the chicken broth.   


After bringing the soup to a boil, lower the heat and simmer it for fifteen minutes.  


Add the half-and-half and cheese tortellini and stir. Cook until the tortellini is al dente, about 10 more minutes.   


Add the spinach and continue cooking for a few more minutes. Add basil and parmesan cheese as garnish, then serve.
