Add salt, half of the spices, and 2 tablespoons of olive oil to a bowl with chopped potatoes. Combine everything well.
Three small Yukon Gold potatoes, 1/4 teaspoon of salt, 1/4 teaspoon of dried Italian spice, 1/4 teaspoon of sweet paprika, 1/4 teaspoon of minced onion, 1/4 teaspoon of minced garlic, 1/4 teaspoon of ground coriander, and 4 tablespoons of olive oil.
Put one or two stacks of potatoes in the air fryer basket. Let it cook for 10 minutes at 400°F.
Put the chopped chicken in a bowl and add salt, the rest of the spices, and olive oil. Let it sit while the potatoes cook. Thoroughly mix everything together.

Season the chicken and place it on the second half of the pan. At 400°F, roast the potatoes and chicken for 12 more minutes.
If the chicken and potatoes aren't browned enough after 12 minutes, flip them over and fry for another 3 minutes, or until you get the char you want and the chicken hits 165°F on the inside. If you want, serve right away with your favourite sauce.
