White Chocolate Macadamia Nut Cookie – 1 cup (220g) unsalted European style butter – 1/2 cup (105g) light brown sugar, packed – 1/2 cup (100g) granulated sugar – 1 large egg + 1 egg yolk – 2 tsp vanilla extract – 1 tsp lemon juice – 2 cups (256g) all-purpose flour – 1/4 tsp kosher salt – 3/4 tsp baking powder – 1/2 tsp baking soda – 1 3/4 cup (290g) white chocolate chips, plus more for topping – 1 cup (125g) dry roasted salted macadamia nuts, coarsely chopped – Flaky sea salt, for sprinkling (optional)

Cookies with white chocolate and macadamia nuts   Preheat the oven to 350F and prepare a large baking sheet with parchment. Slice both butter sticks. Set one stick in a medium saucepan and one in a large mixing basin.

Melt butter in a pot over medium heat. Heat and stir until melted, loud and bubbling, quiet and foamy. The butter will turn golden amber in the final stage.

Heat brown butter and pour it over sliced butter in the mixing bowl. Stir to melt solid butter and cool browned butter. Do the macadamia nut chopping now.

Whisk sugars into brown butter. Next, mix in eggs, vanilla, and lemon juice. Stir vigorously until the mixture lightens and thickens. Mix in salt, baking powder, and soda.

Use a rubber spatula to mix in flour. Fold the white chocolate chips and macadamia nuts into the dough before adding the flour. Let the dough rest for 5 minutes.

This lets the butter absorb the flour and thicken the dough. Scoop 3-4 biscuits onto the baking sheet using a big (3 tbsp) cookie scoop. Add more chocolate chips if desired.

Bake until rims are golden and center is pale, puffy, and little underdone, 11-13 minutes. Sprinkle sea salt on heated cookies if desired. Transfer to cooling rack. Try the cookies warm for the best texture and flavour!
