TIRAMISU COOKIES RECIPE

Enjoy Italian flavours with these Tiramisu Cookies.  These chewy coffee cookies with rich mascarpone cream and cocoa powder are a unique tiramisu variant that's portable.  I wanted to try more tiramisu desserts after my Layer Cake was a hit.

Ingredient

– Butter  – Sugar  – Light Brown Sugar  – Egg  – Espresso Powder – Vanilla  – Flour – Mascarpone Cheese  – Powdered Sugar  – Whipping Cream  – Amaretto  – Cocoa Powder

Bake coffee cookies Mix sugars and butter in a bowl after melting in the microwave.One stick butter, half cup white sugar, half cup light brown sugar

Make a paste with espresso powder and a little hot water. Add to butter/sugar mixture and mix. 3 Tbsp Espresso Powder Add egg and vanilla. Mix well. 1 egg, 1 tsp vanilla

Stir in the dry ingredients until a soft dough forms. Add 1 ½ cups all-purpose flour, ½ teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt. For easy scooping, chill the dough for 30 minutes.

Make Mascarpone CreamMix mascarpone, powdered sugar, amaretto, and vanilla until smooth.One cup Mascarpone, six tablespoons Powdered Sugar, four tablespoons Amaretto, two teaspoons Vanilla

Whip the cream on medium speed in a separate bowl or clean stand mixer until stiff peaks form. 1 cup whipping cream Mix the whipped cream and mascarpone until combined. Refrigerate until assembly and serving.

Tiramisu cookie assemblyLet coffee cookies cool before adding mascarpone.Use chilled mascarpone cream to pipe or spread on cookies.

Place cream in a piping bag and cut off the end by half an inch for a Tiramisu look. Squeeze mascarpone cream into small blobs on the cookie. Sprinkle cocoa powder through a sieve to finish. Cocoa Powder
