Sugar Cookie Bars Recipe

The best cream cheese frosting tops thick, soft-baked Sugar Cookie Bars! A cookie sheet makes enough sugar cookie bars for a crowd. Change frosting and sprinkles for holidays and events. 

– Sugar cookie bar – 1 cup (2 sticks) salted butter softened – 2 cups granulated sugar – 4 large egg – 2 teaspoons vanilla extract – 5 cups all-purpose flour – ½ teaspoon table salt – ½ teaspoon baking soda – Cream cheese frosting – 1/2 cup (1 stick) butter softened – 4 oz cream cheese softened – ½ teaspoon almond extract – ½ teaspoon vanilla extract – 4 cups powdered sugar – 2 tablespoons heavy cream – Food coloring & sprinkle

Preheat oven to 350. Spray a 12"x17" or 13"x18" cookie sheet with cooking spray.

Cream butter and sugar in a stand mixer or hand mixer until light and fluffy. This takes 2-3 minutes. It will start dry and crumbly but become creamy after a few minutes.

Mix after adding each egg. Mix vanilla in well. Whisk together flour, salt, and baking soda in a separate bowl. Stir into the wet mixture until combined. Use the prepared cookie sheet.

Step 3

For 13-16 minutes, bake edges until barely golden brown and centre pale and puffy. The centre should be pale but not wet. My average time is 15 minutes. Frost after pan cooling.

Step 4

Frosting: cream cheese Blend butter and cream cheese until creamy. Beat in vanilla and almond extracts.

Step 5

Blend powdered sugar and heavy cream on low speed to avoid powdered sugar flying everywhere, then increase speed as needed. Spread on cool cookies.
