Strawberry Shortcake Cake Recipe

This strawberry shortcake cake is delicious. Layers of fluffy vanilla cake with light whipped cream and sliced strawberries. The results of this simple cake are stunning and delicious. 


Vanilla Cake – 2 1/2 cups all-purpose flour 324 gram – 1 1/2 tsp baking powder – 1/4 tsp baking soda – 1/4 tsp salt – 3/4 cup unsalted butter room temperature (169 grams) – 1/4 cup vegetable oil 60 ml – 1 1/2 cup granulated sugar 300 gram – 4 large eggs room temperature – 1 tbsp pure vanilla extract – 1 1/4 cup buttermilk 300 ml Strawberrie – 3 cups sliced strawberries about 450 gram – 2 tbsp strawberry preserves or strawberry jam Whipped Cream – 3/4 cup cream cheese room temperature (170 grams) – 2/3 cup powdered sugar 82 grams, divided – 1 1/2 cups heavy whipping cream 360 ml – 2 tsp vanilla extract

A Vanilla Cake Preheat oven to 350ºF. Butter and parchment 3 8-inch cake pans. Mix flour, baking powder, soda, and salt in a bowl. Set aside. 

Step 1


In a large bowl or stand mixer bowl, mix butter, oil, and sugar. Beat ingredients for two minutes until fluffy. Hand or stand mixer paddle. Totally incorporate another egg before adding it. 

Step 2

Between mixes, scrape bowl. Add vanilla. Mix one-third buttermilk into batter on low. Use one-third of the dry ingredients. Low-speed blend. Three more buttermilk. Add another third flour. 

Step 3

Add remaining buttermilk. Finish with remaining flour and mix low. Overmixing the batter is avoided by spatula mixing. Pour batter into bowls. 

Step 4

Bake the cake until a toothpick comes out clean, 30 minutes in a preheated oven. Remove cake from oven.  

Step 5

Flip the cake onto a cooling rack or plate after 10 minutes. Cool the cake completely. For later assembly, wrap the cake in plastic and refrigerate or freeze. 

Step 6

Strawberries Cut strawberries 1/8-inch thick. Put in bowl. Mix preserves. A few drops of water help mix thick strawberry jam or jelly with strawberries. Set aside. 

Step 7

Whipping Cream Whip cream for cake frosting. Too much bowl time deflates whipped cream. Pipes stay put. 

Step 8

Mix cream cheese and half the powdered sugar for one minute with an electric mixer, then add vanilla and whip for 30 seconds. Cream cheese stabilises whipped cream.

In another bowl, beat heavy cream and remaining powdered sugar on medium-high speed for 3–4 minutes until stiff peaks form. 

Step 10

Mix one third of the whipped heavy cream with the cream cheese on low or by hand. Add another third of whipped cream to the bowl. Gently fold the ingredients to avoid deflating the light, fluffy mixture. 

Step 11

Gently fold in remaining heavy cream. Use your favourite piping bag tip. Tip 4B. Spread cream on cake instead of piping and assemble the cake.
