Cream cream cheese, icing sugar, and vanilla in a medium bowl until smooth. Before making your delicious cream cheese filling, cream cheese should be room temperature.

Use a teaspoon to drop generous blobs of cream cheese mixture onto a small parchment-lined cookie sheet. If you don't have a small cookie sheet for your freezer, use a plate.

PREPARE COOKIE DOUGH
Pre-heat oven to 350°F / 180°C and line one or two large baking sheets with parchment.

Beat the butter and sugar in a large bowl until fluffy. You can use a stand mixer, hand mixer, electric mixer, or wooden spoon. Combine egg and vanilla and beat on medium speed until smooth.

Sieve flour, baking soda, salt, and cornflour and mix into batter until lump-free.Stir in white chocolate chips and graham crackers slowly until evenly distributed.Add sliced strawberries to dough and mix gently without mashing.

Make two tablespoons of dough into a ball with a medium cookie scoop or spoon for stuffed cookies. Make a thumb or spoon groove for cream cheese filling on the cookie sheet and press it flat.

After making all your cookie bases, carefully place one decadent cheesecake filling blob in the centre of each cookie groove. Leave space between these large cookies because they spread in the oven.
