Strawberry Challah Bread Pudding Recipe

This bread pudding is fruity and full of vanilla custard. It's great for brunch or as a treat.  


– 400 g 14 oz challah loaf butter for greasing the dish Strawberry sauce – 500 g 1.1 pounds strawberries, trimmed and finely chopped (leave 3 whole) – 115 g 1/2 cup or 4 oz granulated sugar – 1/2 teaspoon vanilla bean paste – 1/2 tablespoon fresh lemon juice Vanilla custard – 230 g 1 cup or 8 oz granulated sugar – 4 large egg – 320 ml 1 1/3 cup whole milk – 320 ml 1 1/3 cup heavy or whipping cream – 1 vanilla bean split lengthwise

Step 1

Preheat oven to 180°C (350°F). Cut the challah into 1.5-cm (1/2-inch) slices, halves, and set aside. Butter and reserve a 32 x 20 x 6.5-cm (12.5 x 8 x 2.5-inch) oval baking dish.  


Step 2

Make strawberry sauce: In a saucepan, mix strawberries, sugar, vanilla bean paste, and lemon juice.   

Step 3

Stir occasionally over medium heat until mixture simmers. Cook until sugar melts and strawberries release liquid and tenderize, about 10 minutes. Remove from heat and cool.  

Step 4

Make vanilla custard: Mix sugar and eggs in a medium heatproof bowl. Scrape vanilla seeds and bean into a heavy saucepan with milk and cream.   

Step 5

Remove from heat after simmering over medium heat and discarding vanilla bean pod. Pour slowly into the egg mixture, whisking constantly.  

Step 6

Set up pudding: Place 1/2 of the bread slices in the dish, covering the bottom but leaving room between them. Spread half the strawberry sauce on the slices.   

Step 7

Top with remaining challah and strawberries. Pour over custard slowly. Use a spoon to press down the top layer while the bread soaks up the liquid.  

Step 8

Finally, garnish the pudding with 3 cut strawberries. Fill roasting pan with hot water to halfway up edges of baking dish.  

Step 9

Take pudding out of the oven and let it stand in the water bath for 30–40 minutes after 50 minutes. The pudding should be set, the custard thick, and the strawberries toasted. Remove dish from pan.  

Step 10

Serve powdered sugar-dusted pudding. Serve pudding with whipped cream in bowls or pieces.
