Spaghetti Squash Soup with Sausage recipes

Spaghetti Squash Soup with Sausage is a filling and healthy soup that is easy to make. Not made with gluten or cheese.

Ingredient

– Spaghetti squash – Vegetable broth – Spicy chicken sausage – Onion, carrots, garlic – Italian seasoning – Swiss chard – Red pepper flakes, black pepper, salt

Direction

Put one tablespoon of olive oil in a big Dutch oven or soup pot.

Put in the sliced sausage and cook for two to three minutes on each side. Take the sausage out of the pan.

Add another tablespoon of oil, then cut onions and carrots. Sauté onions and carrots until tender, stirring periodically.

Cook minced garlic cloves for one minute, then add squash strands, Italian seasoning, chili flakes, salt, and pepper.

In a saucepan set over medium-high heat, add the broth and bring it to a boil.

Lower the heat and add the sausage back to the pot. Put the lid on top and cook for 25 minutes.

Put the lid back on the pot, add the chard, and cook for another 5 minutes. Add black pepper to the top of the finished soup.
