Traditional pancakes are given a makeover that is regarded to be healthier than the original design!
INGREDIENTS
– 3 medium bananas(unpeeled weight about 13oz | 370g)– 1/2 cup milk(of your choice)– 1/2 tablespoon maple syrup– 1 teaspoon vanilla extract– 1/4 teaspoon fine sea salt– 2 large egg– 1 1/3 cup oat flour– 2 teaspoons baking powder– 1/2 teaspoon cinnamon– oil or butter for cooking
Step 1
Blend bananas, milk, maple syrup, vanilla extract, and salt in a bowl until smooth (I use an immersion mixer, but you can use a blender).

Add eggs. Whisk. After flour, add baking powder and cinnamon. Then stir the dry ingredients into the wet until smooth and lump-free.
Step 3
Heat a non-stick pan, cast iron skillet, or griddle on medium. Pour oil on it lightly.
Step 4
Pour 1/3 cup of batter onto the pan (cook a few at a time if you have a large pan or griddle) once you feel the heat. Cook the pancake on one side for 3 minutes until bubbles develop.
Step 5
Turn the pancake with a spatula and cook for 90 seconds until golden brown on both sides. (You may need to adjust heat now. Lower the temperature if the pancake browns quickly.
Step 6
Increase the temperature if it's taking forever to cook. Use the remaining batter. Hot pancakes with extra bananas or other fruit and maple syrup or chocolate sauce.
