Salted Pretzel Cowboy Party Cookies Recipe

– 2 sticks (1 cup) salted butter, at room temperature – 3/4 cup dark brown sugar – 1/4 cup granulated sugar – 2 large eggs, at room temperature – 1 tablespoon vanilla extract – 1 3/4 cups + 2 tablespoons all-purpose flour – 1 teaspoon baking soda – 1/2 teaspoon ground cinnamon (optional) – 1/2 teaspoon kosher salt – 1 1/2 cups old fashioned oats – 1 1/2 cups shredded unsweetened coconut – 1 1/2 cups semi-sweet chocolate chips – 1/2-1 cup semi-sweet chocolate chunks – 1 cup mini pretzel twists, crushed – Flaky sea salt, for sprinkling

Start with a 350-degree oven. Parchment a baking sheet. Mix butter, brown sugar, and granulated sugar in a large bowl.

Beat eggs one at a time until mixed. Beat in vanilla until creamy. Put flour, cinnamon, baking soda, and salt in. Oats, coconut, chocolate chips, and pieces should be folded in.

Round the dough into 2 tablespoon balls. On prepared baking sheet, space 3 inches apart. Gently press a few smashed pretzel bits into each dough ball (see photo), then flatten with your palm to 1/2 inch thickness.

Transfer to oven and bake 5 minutes. After taking the pan out of the oven, tap the baking sheet three times to flatten it.

Return the cookies to the oven for 4 more minutes until the borders are just starting to harden but the centre is still doughy. Tap the baking sheet 2-3 times on the counter to flatten them after removing from the oven.

Leave cookies on baking sheet to cool. While on the baking pan, they will cook slightly. Season with flaky salt. Eat warm (preferred) or chill and keep in an airtight jar for 4 days.
