A simple brownie batter made from scratch is used to make these Salted Caramel Brownie Bites. They are then filled with a rich caramel filling that is very easy to make! Add some flaky sea salt on top to make a dessert you'll want to eat again and again!

12 Tablespoons unsalted butter cut into Tablespoon-sized pieces½ cup semisweet chocolate chips 100g1/2 cup natural cocoa powder 50g1/2 teaspoon instant coffee grounds optional1 cup tightly packed light or dark brown sugar 200g1/2 cup granulated sugar 100g2 large eggs + 1 large egg yolk1 teaspoon vanilla extract1 cup + 2 Tablespoons all-purpose flour 140g1/2 teaspoon baking powder1/2 teaspoon salt

Warm up the oven to 350F (175C) and spray baking spray on a 24-count mini muffin tin.

Mix butter and chocolate chips in a large microwave-safe bowl. Microwave 30 sec. Stir again after 15 seconds in microwave. Repeat for 15 seconds to melt and mix butter and chocolate.

After adding cocoa powder, instant coffee, and sugars, beat in eggs, egg yolk, and vanilla extract. In another medium bowl, mix flour, baking powder, and salt.
Mix dry and wet ingredients until well combined. Place 1 1/2 tablespoons batter in mini muffin tin.

Bake at 350F (175C) for 18 minutes or until a toothpick inserted in the centre comes out clean or with a few fudgy crumbs.

Press a rounded teaspoon or Tablespoon into each brownie bite to make a well immediately after baking (see photo in post) Allow brownie bites to cool while making caramel filling.
