Pumpkin Bars Recipe
Easy pumpkin bars with luscious texture and creamy cream cheese frosting are full of fall flavour. Nobody dislikes them yet!
Cake:
– 1 (15 ounce) can pumpkin puree
– 1 ⅔ cups white sugar
– 1 cup vegetable oil
– 4 large egg
– 2 cups all-purpose flour
– 2 teaspoons ground cinnamon
– 2 teaspoons baking powder
– 1 teaspoon baking soda
– 1 teaspoon salt

– ½ cup butter, softened
– 1 (3 ounce) package cream cheese, softened
– 1 teaspoon vanilla extract
– 2 cups sifted confectioners' sugar

Pre-heat the oven to 175 degrees Celsius (350 degrees Fahrenheit).

To prepare the cake, thoroughly mix the pumpkin, sugar, oil, and eggs in a medium-sized basin using an electric mixer.

In a another dish, sift together flour, baking soda, baking powder, cinnamon, and salt.

Add to pumpkin mixture and stir until well blended. Using an oiled 10 x 15-inch jelly roll pan, evenly distribute batter.
Bake 25–30 minutes in preheated oven until cake springs back when gently pressed. Remove from oven and cool.

Make icing while cake cools: Whisk butter and cream cheese until creamy; add vanilla. Slowly add confectioners' sugar and whip until smooth.

Spread the frosting on top of the cake after it has cooled. Reduce to 24 squares in size. Have fun!
