Puffed Quinoa Date Energy Balls Recipe

Delectable snacks that are also good for you!  

INGREDIENTS 

– 95 g 1 cup | 3.3oz old-fashioned (rolled) oat – 100 g 3.5oz Medjool dates (5 dates), pits removed – 45 g 1.5oz bittersweet (45%) chocolate – 50 g 1 2/3 cups puffed quinoa – 65 g 1/4 cup almond butter – 110 g | 80ml 4oz | 1/3 cup honey shredded desiccated coconut for rolling the ball

Step 1

In a food processor, mix the oats, dates, and chocolate together. On high, blend the ingredients together until they look like coarse pieces. Add the puffed quinoa and stir it in after moving the mixture to a big bowl.

In a small pot, mix almond butter and honey together. Cook over low heat, stirring every now.  

Step 3

Then, until the mixture is well mixed and just starts to simmer. Put the items in a mixing bowl and use a spatula to mix them together.  

Step 4

You should be able to touch the blend without getting too hot. Roll each one into a coconut and put it on a big plate. Place in the fridge and let it set for about two hours.  

Step 5

Energy balls can be kept in the fridge for a few weeks in a jar that keeps air out. You can leave them out at room temperature, but watch out because they do get a little loose.
