Potato Cauliflower and Leek Soup recipes

This kale and potato, leek, and cauliflower soup is rich and creamy without any dairy. This simple dish, which is based on Irish colcannon potatoes, is healthy and filling. 

Ingredient

– Olive oil – Leek – Russet potatoe – Cauliflower – Minced garlic – Vegetable broth – Coconut cream – Kale 

Direction

Use a Dutch oven, a big saucepan, or a soup pot to warm the olive oil. Once the leeks are soft, add the garlic.

After the potatoes and broccoli, add the veggie broth. Bring it to a boil, then let it cook on low for 15 minutes.

When you add the coconut cream to the pot, stir it in well. Half of the mixture should be pureed with an immersion blender until it is smooth.

Leave the other half of the vegetables whole.
