Pecan Pie Cookies with Butter Pecan Frosting Recipe

These pecan pie cookies with butter pecan frosting would be November's cookie. Buttery sugar cookies with creamy butter pecan icing and chocolate drizzle. So much to like! Ideal for Thanksgiving entertaining, include these cookies on your table.Your guests will appreciate it!

– 3 sticks (1 1/2 cups) Land O Lakes Salted Butter, at room temperature – 1 1/4 cups packed light brown sugar – 1 tablespoon pure vanilla extract – 2 eggs at room temperature – 4 1/2 cups all-purpose flour – 1 teaspoon baking soda – 1/2 teaspoon salt BUTTER PECAN FROSTING – 1 1/2 sticks (12 tablespoons) Land O Lakes® Salted Butter, at room temperature – 2/3 cup heavy cream – 1 cup plus 2 tablespoons packed brown sugar – 1 1/2 cups raw pecans – 2 tablespoons bourbon (optional) – 2 teaspoons vanilla extract – 1/4 teaspoon cinnamon – 3 cups powdered sugar – Melted chocolate, for drizzling

Mix the butter, sugar, and vanilla in a large bowl for 3-5 minutes until frothy. Add eggs one at a time and stir well. Beat in the flour, baking soda, and salt until the mixture forms a ball.

Coat your work surface with flour. Flatten each half of dough into a disc. Roll the dough 1/4 inch thick. To avoid dough sticking, use enough flour. Use your preferred cookie shape (I used a leaf).

Carefully place cookies on a parchment-lined baking sheet. Wrap the baking sheet in plastic wrap and freeze for 10-15 minutes until solid. Roll out leftover scraps and repeat with remaining dough disc.

Heat the oven at 350. Bake soft cookies on the centre rack for 10-12 minutes or until softly golden brown. Avoid overbaking. After five minutes on the baking sheet, transfer to a wire cooling rack to finish cooling.

Melt cream, brown sugar, and 4 tablespoons butter in a medium sauce pan. Boil for one minute to dissolve sugar. Remove from heat and add to stand mixer bowl. For 15-20 minutes, freeze or refrigerate the bowl until cool to touch.

Remove, cool 10 minutes, and roughly chop pecans. Remove chilled butter mixture from freezer and add remaining 8 tablespoons butter, remaining teaspoon vanilla, and powdered sugar to bowl. Beat until well mixed.

Sprinkle chopped pecans on frosted cookies. Chocolate drizzle. Cookies can last 3 days in an airtight container.
