Peanut Butter Chocolate Chunk Oatmeal Cookies Recipe

Ingredient

– 1 cup canola oil, or melted coconut oil – 3/4 cup creamy peanut butter – 2 large eggs – 2 teaspoons vanilla extract – 2 1/2 cups old fashioned oats – 2 cups all-purpose flour – 1 cup brown sugar, packed – 1/2 cup granulated sugar – 1 teaspoon baking soda – 1 teaspoon kosher salt – 1 1/2 cups chocolate chunks or chips

Start with a 350-degree oven. Parchment a baking sheet.   Combine the canola oil, peanut butter, eggs, and vanilla in a large bowl or stand mixer.

Mix in muesli, flour, brown sugar, granulated sugar, baking soda and salt. Beat until thoroughly moistened dough and contents are incorporated. Crumbly dough. Mix in chocolate chunks.

Form balls by clumping a tablespoon of dough at a time with your hands. Place 2 inches apart on the baking sheet and gently flatten with your palm. Crumbly dough is fine.

Bake until firm and golden, 8–10 minutes. Let these crumbly cookies set on the pan for 5 minutes before eating!
