Sweet and salty peanut brittle has the right crunch and shine. You can make excellent brittle for party attendees or as a Christmas present with a little patience.
Grease a baking pan with nonstick cooking spray and line it with foil.

In a medium saucepan with a candy/deep-fry thermometer, combine sugar, corn syrup and 1/2 cup water. For 15 minutes, boil the mixture over medium heat

Remove the pan from heat and immediately mix in the butter and baking soda until smooth (it will foam and bubble). Stir the peanuts into the sugar mixture until evenly distributed.

Pour on baking sheet and quickly smooth with rubber spatula into a thin layer. Harden at room temperature until completely cooled. Store broken pieces airtight.
