One Pot Chicken Florentine Gnocchi Simples Recipe Ever

– 2 tablespoons olive oil – 1 pound chicken breasts  – ½ teaspoon salt – ½ teaspoon black pepper – ¼ cup shallot – 2 cloves garlic  – ¼ cup sun dried tomatoes  – 1 cup half and half cream – 2 cups chicken broth  – 2 pounds gnocchi – 2 cups fresh spinach – 2 cups mozzarella cheese – ½ cup parmesan cheese

In a large skillet, heat olive oil on medium-high. Season the chicken with salt and pepper and heat for 2–3 minutes until it browns.

Add the sun-dried tomatoes, garlic, and shallots. Cook, stirring, for one to two minutes.

Stir in the half-and-half cream and chicken broth. After bringing to a simmer, add the raw gnocchi and stir.

Simmer for 4 to 5 minutes, or until the gnocchi are soft and the sauce has thickened. During this time, they should also absorb the sauce and make it thicker.

As the spinach wilts, add it and fold it into the mixture. If necessary, add more salt and pepper after tasting for seasoning.
