Nutrient-rich homemade peanut butter granola bars are the perfect snack. Dark chocolate makes chewy peanut butter granola bars delicious. Family-friendly, no-bake, portable!
– ½ cup creamy natural drippy peanut butter (just peanuts & salt)– 1 1/2 tablespoons virgin coconut oil– 3 tablespoons honey (or use coconut palm syrup or date syrup if vegan)– 1 teaspoon vanilla extract– 1/2 teaspoon cinnamon– ⅓ cup flaxseed meal– 1 tablespoon chia seed– ½ cup old fashioned rolled oats, gluten free if desired– 1/3 cup roasted almonds, roughly chopped* (or sub chopped pecans)– ¼ cup unsweetened shredded coconut

Low-melt peanut butter, coconut oil, honey, vanilla, and cinnamon in a medium pot. Stir often to cream. After cooking, add flaxseed, chia, and oats. Almonds, coconut.

Parchment an 8x4-inch loaf pan, pour granola bar ingredients in, distribute evenly, and press down hard. Top with remaining roasted almonds.

Combine dark chocolate chips and ½ teaspoon coconut oil in a microwave-safe bowl. Stir chocolate every 30 seconds in high microwave to melt. Diagonal drip bars.

Chill 30–60 minutes or freeze 15-20 minutes to harden mixture. Foil-cover. Break 8 granola bars from pan. Wrap bars in foil or plastic and refrigerate. Chilled bars last a week.
