No Bake Chocolate Chip Cookies Recipe

No-bake chocolate chip cookies. My goodness. These cookies! I adore them. They are 100% vegan, prepared with six easy ingredients, sugar-free, chocolate-filled, tasty, and require no cooking. A sweet treat for each day may be made in 20 minutes. 

Ingredient

– 1 1/2 cups roasted, salted cashews – 8 ounces pitted medjool dates, make sure you are using moist, plump date – 3 tablespoons coconut oil – 2 teaspoons vanilla extract – 2 cups old fashioned oats – 1 cup semi-sweet or dark chocolate chips, plus 4 ounces more to melt overtop if desired (make sure your chocolate is vegan if that is a concern – Flaky sea salt

Parchment a baking sheet. Mix cashews, dates, coconut oil, vanilla, and oats in a food processor. Mix until no big dates remain.

Add a spoonful of coconut oil and a splash of water to moisten dry dough. Mix in chocolate chips.

Form 18–20 tablespoon-sized dough balls and place on the baking sheet. Gently massage each dough ball into rounds with your palm. Place in freezer for 10-15 minutes until solid.

If desired, pour 4 ounces of melted chocolate over cookies. Season with flaky salt. Keep the chocolate in an airtight jar in the fridge or eat it.
