These simple morning glory muffins are a delicious way to start the day. The chewy texture and delicious taste of carrots are combined with apple, raisins, coconut, walnuts, and cinnamon.
– 1 apple - peeled, cored and shredded– ½ cup raisin– ½ cup chopped walnut– ½ cup unsweetened flaked coconut– 3 large egg– 1 cup vegetable oil– 2 teaspoons vanilla extract

Turn the oven on to 350 degrees Fahrenheit (175 degrees Celsius). Use paper liners or grease a 12-cup muffin pan.

Mix flour, sugar, baking soda, cinnamon, and salt in a large basin; add carrots, apple, raisins, walnuts, and coconut.
