An energizing and delightful treat for the summertime!
INGREDIENTS
Avocado layer– 120 ml 1/2 cup water– 60 g 1/4 cup granulated sugar– 1 large avocadoweight about 240g | 8.5 oz– 1/4 teaspoon salt– 15 ml 1 TBSP fresh lime juiceKiwi layer– 2 large kiwispeeled– juice from 1 limeabout 30ml | 2 TBSP– 240 ml 1 cup sweetened condensed milk– 60 ml 1/3 cup full fat milk– 60 ml 1/3 cup whipping cream– 1 teaspoon lime zestoptional
Step 1
Avocado layer
Boil water and sugar in a pot over medium heat. Heat sugar until dissolved. From stove, cool to room temperature.
INSTRUCTION
Step 2
Slice avocado in half, remove pit, and scoop flesh. Add syrup, salt, and lime juice to blender. Puree thoroughly. The mixture should be thick and silky.
Step 3
Kiwi layer
Boil 2 cups of water in a small pot. Add sliced kiwi and heat for a minute.
Step 4
Kiwis turn an intense green to a light green. Drain kiwi, add lime juice, and cool to room temperature.
Step 5
Puree kiwi and lime juice in a blender. Mix milks and cream in a bowl. Stir in pureed kiwi and lime zest (if using).
Step 6
Assembly
Divide avocado amongst 8 molds. Slowly add kiwi mixture. Insert popsicle sticks, cover, and freeze for 5-6 hours.
