INGREDIENTS
– 2 (6-ounce) salmon fillet– 1 teaspoon vegetable oil– 4 tablespoons butter– ¾ cup finely diced shallot– 1 tablespoon minced garlic– ¼ teaspoon crushed red pepper– 1 tablespoon lemon juice– ½ teaspoon lemon zest– 1 tablespoon chopped fresh dill, plus more for serving– ¼ cup vegetable broth
Optional Ingredient– Flaky sea salt, for serving– Lemon slices, for serving

To absorb moisture, pat the salmon skin with a paper towel. Add vegetable oil to a medium, heavy-bottomed skillet over high heat.

Put salmon skin-side down in pan. 3 minute sear. Flip salmon and cook 3 more minutes. Place salmon skin-side up on a plate.
Step 3
Lower heat to medium and add butter to the skillet. Add garlic and shallots after melting. Cook shallots for 2 minutes until soft.

Continue cooking for 1 minute with crushed red pepper. Stir in lemon juice, zest, dill, and broth on medium-low heat.

Return salmon skin-side up to pan and cook for 3 more minutes when broth bubbles. Take skillet off heat. If preferred, add flaky sea salt, lemon slices, and more dill and serve.
