Herby Lemon Butter Fish Skillet Recipe

This recipe shows that simple meals can be powerful. Use salmon, sablefish, or char in this simple skillet with lemony, buttery sauce.  

INGREDIENTS 

– 2 (6-ounce) salmon fillet – 1 teaspoon vegetable oil – 4 tablespoons butter – ¾ cup finely diced shallot – 1 tablespoon minced garlic – ¼ teaspoon crushed red pepper – 1 tablespoon lemon juice – ½ teaspoon lemon zest – 1 tablespoon chopped fresh dill, plus more for serving – ¼ cup vegetable broth Optional Ingredient – Flaky sea salt, for serving – Lemon slices, for serving

Step 1

To absorb moisture, pat the salmon skin with a paper towel. Add vegetable oil to a medium, heavy-bottomed skillet over high heat.

Step 2

Put salmon skin-side down in pan. 3 minute sear. Flip salmon and cook 3 more minutes. Place salmon skin-side up on a plate.  

Step 3

Lower heat to medium and add butter to the skillet. Add garlic and shallots after melting. Cook shallots for 2 minutes until soft.  

Step 4

Continue cooking for 1 minute with crushed red pepper. Stir in lemon juice, zest, dill, and broth on medium-low heat.  

Step 5

Return salmon skin-side up to pan and cook for 3 more minutes when broth bubbles. Take skillet off heat. If preferred, add flaky sea salt, lemon slices, and more dill and serve.
