Healthy Samoas Cookie Bars have a cookie crust made of almond flour, date caramel, and coconut shreds. A simple and better way to enjoy the taste of your favorite Girl Scout cookie! Vegan, gluten-free, and dairy-free.
Ingredient
– Medjool date– coconut or almond milk– maple syrup– unsweetened shredded coconut– almond flour– coconut oil or vegan butter– dairy-free chocolate chip
Direction
Warm the oven up to 350 degrees Fahrenheit. Put parchment paper inside an 8x8 pan that has been greased.

Mix almond flour and salt in a large basin. Maple syrup with coconut oil or vegan butter.

Bake 12-14 minutes until crust edges and top gently golden. Stop baking and put aside.

hile crust bakes, pit and slice dates and cover with boiling water in a small dish. Soak for 5 minutes minimum.

Place date caramel in a medium bowl. Shred coconut. Mix well. Spread date caramel mixture evenly over cooked crust.

Melt chocolate chips in a small microwave-safe dish for two 30-second intervals. Top bars with melted chocolate after removing from fridge.

Cookie bars made using Samoas may be kept in the refrigerator for up to four days.
