– 2 cups whole rolled oats– 1/2 cup chopped walnuts, (or almonds, or a mix of both)– 1/2 cup coconut flakes, optional– 2 teaspoons cinnamon– 1/2 teaspoon sea salt– 2 tablespoons melted coconut oil– 1/4 cup maple syrup– 2 tablespoons creamy almond butter– 1/3 cup dried cranberries, optional

Set a baking sheet covered with parchment paper and preheat the oven to 300°F.

Blend oats, walnuts, coconut flakes, cinnamon, and salt in a medium bowl. Blend almond butter, maple syrup, and coconut oil. Shape the granola into a 1-inch oval on the baking sheet. Helps clump.

Bake 15 minutes, rotate the pan halfway, and fork-break the granola. Bake 15 minutes more until golden brown. If desired, add dried cranberries. Serve after 15 minutes of cooling.
