Gluten-Free Pumpkin Cookies (Vegan) recipes

Because they are gluten-free, these iced pumpkin cookies are made with almond flour, coconut flour, pumpkin, and spices. No meat.

Ingredient

– Almond flour – Coconut flour – Canned pumpkin puree – Maple syrup – Organic cane sugar – Vegan butter – Arrowroot starch – Pumpkin pie spice

Direction

Pulse cane sugar, melted butter, maple syrup, puree, and vanilla extract in a food processor or large bowl for 20 seconds.

Add almond flour, coconut flour, salt, baking soda, baking powder, arrowroot starch, and pumpkin pie spice and process until a dough forms.

To scoop dough, use a spoonful or a #40 cookie scoop. Use your hands to form a ball, then put it on a cookie sheet.

Mix the powdered sugar, melted butter, non-dairy milk, and vanilla extract together in a small bowl. Do this until a glaze forms.
