– Baby potatoe– Quinoa– Green salsa– Diced tomatoe– Yellow onion and garlic– White bean– Vegetable broth

Cook olive oil in a 4-quart saucepan or big pot over medium heat. Stir onion and potatoes occasionally until onions become translucent and potatoes soften, about 10 minutes.

Next, add the chili spice, which is made up of cumin, chili powder, dried oregano, salt, and black pepper.

Put tomatoes and green salsa in. Stir. Add the quinoa and veggie broth, and mix them together. Bring up the temperature.

When it starts to boil, turn down the heat to medium-low, add the beans, and cover. For about 20 to 25 minutes, or until the quinoa is soft, simmer over low heat.
