Toast with lots of cheese and beans that taste like pizza sauce. Great for a filling breakfast or a quick dinner during the week.
INGREDIENTS
– 6 thin slices sandwich breador bread of choice– 2 tablespoons olive oil plus more for bread– 2 garlic clovesgrated– 2 tablespoons tomato pasteI use double concentrated– 1 teaspoon dried oregano– 1/2 teaspoon sweet smoked paprika– 2 cups cooked cannellini beansI use canned– 2 tablespoons chopped fresh parsley– 1 tablespoon unsalted butter– 6 oz Provolone (or Edam) cheesegrated
Step 1
Pre-heat your oven to 350°F (175°C) and line a baking sheet with parchment. Brush both sides of bread slices with oil and place on baking sheet.
INSTRUCTION
Step 2
Toast the bread for 2 minutes on each side in the middle of the oven until the edges are slightly crusty. Remove from oven, set aside, and heat to 400°F (200°C).
Step 3
Prep the beans:
Cook 2 tablespoons olive oil in a large skillet over medium heat. Add garlic and heat for 15 seconds until fragrant.
Step 4
Add the tomato paste, oregano, and paprika and simmer for 30 seconds until aromatic and melted. Stir in the beans to coat them with tomato paste. Add parsley and 1/2 cup (120 ml) water.
Step 5
Stir and boil over medium heat for 10 minutes until the sauce is creamy, not soupy. As butter melts, mix it evenly with beans. Taste and season beans, then remove from fire.
Step 6
Bake:
Spread beans equally over bread slices after the oven is preheated. Sprinkle grated cheese on each piece.
Step 7
Bake for 5 minutes to melt and bubble the cheese. Serve after baking, adding sliced fresh basil if available.
