Chocolate, orange, and warm spices make these cookies delicious. These easy cookies would be welcome at this year's cookie swap. My mum (nonna to my kids) made this recipe during our childhood.
Ingredient
– 2 cups all-purpose flour– 1/3 cup cocoa powder– 2 tsp baking powder– Sea salt: ¼ tsp – 1/4 tsp cinnamon– 1 tsp pure vanilla– 2 eggs temperature of room– 3/4 cup granulated sugar– ½ cup milk – ½ cup unsalted butter – 1 tsp pure vanilla– 4 ounces melted,– Optional: ½ cup almonds or walnut– Zest 1 orange

I melted chocolate in a double boiler. I melt in a heat-proof bowl or double boiler (or small sauce pan) over simmering water over medium heat. Stir melting chocolate. Allow to cool.

Mix flour, cocoa, baking powder, salt, and spices. I mixed them in a bowl. Sift them all together. If I whisk them well, they mix well. Set aside.

Beat eggs and sugar in a heavy-duty electric mixer with the paddle attachment until light and fluffy. Use a hand mixer or a wooden spoon and arm power if you don't have one.

Add wet ingredients: Add milk and melted chocolate. Add vanilla extract and mix well.
Add dry ingredients: Turn mixer to low speed and add dry ingredients in small amounts, stopping to scrape the bowl and combine. This can be done by hand with a wooden spoon or spatula.

Soft, sticky dough needs chilling. Refrigerate the mixing bowl covered in plastic wrap for 30 minutes to 2 hours. More chilling makes it easier to work with. If the dough is sticky after 30 minutes, chill longer.

Meanwhile, preheat the oven to 350 degrees F and line baking sheets with parchment paper. Baking spray.

On baking sheets, space cookies 2 inches apart. Roll and place remaining dough on baking sheet.
Bake: Bake 8-10 minutes until firm. Cool on a wire rack after removing from oven. Up to 1 week in an airtight container.
