Easy Boston Cream Poke Cake Recipe

Easy, delicious poke cakes with a creamy surprise! Boston Cream Poke Cake is simple to make with yellow cake mix, vanilla instant pudding and chocolate glaze. One-pan desserts are great for parties. 

– 1 box (15.25 oz) yellow cake mix  – 2 boxes (3.4 oz each) instant vanilla pudding mix – 4 cups whole milk OR half and half – 1 teaspoon vanilla extract – 1 container (16 oz) store-bought chocolate frosting

Follow the cake mix's bake instructions to preheat the oven. Coat a 9x13 baking pan with nonstick cooking spray and set aside.

Prepare yellow cake mix per package instructions. It usually involves adding water, oil, and eggs and mixing well.

Use the prepared pan to pour cake batter. Follow the cake box instructions (25–35 minutes).While making the vanilla custard filling, let the cake cool.

Mix instant vanilla custard mix, milk and vanilla extract in a large bowl until thickened, 2-3 minutes.After the cake cools, use a wooden spoon to poke 1-inch-diameter holes in the top.

Pour the pudding into the holes and spread it over the cake with an offset icing spatula. Cover the cake with a lid or plastic wrap and refrigerate for 6 hours to cool and thicken the frosting.

Step 5

Remove the cake from the fridge. For 20–30 seconds, microwave the tub of chocolate frosting to thin it and make it pourable.

Use an icing spatula to evenly spread chocolate frosting on the cake.Cover the cake with a lid or plastic wrap and refrigerate for 2-3 hours for a firmer texture and frosting.
