Delicious French Toast Casserole Easiest Recipe Ever

French Toast Casserole tastes like your favorite brunch with fewer carbs. It can be prepared a day ahead for holidays and festivities!

– 1 loaf Keto White Bread (from egg strata recipe) – ½ cup chopped pecan – 6 large egg – ¾ cup heavy whipping cream – ½ cup Swerve Brown (or other brown sugar replacement) – ¼ cup water – ⅓ cup collagen protein powder, optional (salted caramel, vanilla, or cinnamon!) – 2 teaspoon vanilla extract – 1 teaspoon cinnamon

Cut the bread into ¾-inch cubes and spread them out on a baking sheet. Dry it out overnight OR put it in an oven set to 200ºF for one to two hours, or until it feels dry to the touch.

Prepare an 8x8 glass or ceramic baking dish with cooking spray. Then, spread the bread cubes out evenly in the dish. Add the nuts on top.

Bring the eggs, cream, sweetener, and water to a big bowl or measuring cup. Mix them with a whisk. When you add the collagen protein powder,

whisk it in quickly and hard until there are no more clumps. You can also use an immersion blender to smooth it out. Add the vanilla and cinnamon and mix them in.

Spread the egg mix out on the bread, making sure that each cube gets some to keep it moist. Put cardboard or plastic wrap over the top and use several big cans to weigh it down.

Place in the fridge for an hour or up to overnight to let the egg mix soak into the bread. Heat the oven to 325ºF when you're ready to bake.

After taking the dish out of the fridge, take off the cans and the plastic wrap. Let it sit at room temperature while you heat up the oven.

Bake the foil-wrapped dish for 30 minutes. Remove the paper and bake for 15–20 minutes until the middle is barely set. Remove it and wait 15 minutes before serving.
