Delicious chocolate pancakes with chocolate chips and handmade chocolate sauce. Gourmet brunch every day!
INGREDIENTS
– 1¼ cups all-purpose flour (150g)– ¼ cup unsweetened cocoa powder (25g)– ¼ cup granulated sugar (50g)– 2 teaspoons baking powder– 1 teaspoon salt– ¾ cup whole milk (180ml)– 2 large egg– 4 tablespoons unsalted butter melted plus more for cooking (56g)– 2 teaspoons vanilla extract– ½ cup semi-sweet chocolate chips (90g)Chocolate Sauce:– ¾ cup semi-sweet chocolate chips (135g)– ¾ cup heavy cream (180ml)
INSTRUCTIONS
For the Pancakes:- Mix the cocoa powder, sugar, baking powder, and salt in a big bowl with a whisk.
Step 1
Whisk milk, eggs, melted butter, and vanilla extract in a medium basin until well blended. Add the wet mixture to the dry and stir until almost incorporated.
Step 2
Stir in the chocolate chips a few times, then put aside the batter. A few lumps in the batter are fine! Heat a large non-stick skillet on medium. Grease lightly with butter.
Step 3
Place ¼ cup of batter per pancake into the skillet, working in batches. Cook each pancake for 3 minutes until the edges are firm and the top has many bubbles.
Step 4
Flip carefully and cook until golden brown and springy, 1–2 minutes. Keep heated on a platter. (A 200°F oven works great.)
Step 5
For the Chocolate Sauce:- Heat cream in a small saucepan over medium heat until steaming, not boiling. Get off the heat. Stir in chocolate chunks until smooth. Serve sauce on warm pancakes.
