Delicious Banana Pancakes Recipe

Fruity, fluffy The best breakfast or brunch comfort food is banana pancakes. This recipe works every time with ripe bananas and basic ingredients. Maple syrup and banana slices make this supper family-friendly.  

INGREDIENTS

– 1 cup all-purpose flour (120g) – 2 tablespoons granulated sugar – 2½ teaspoons baking powder – ½ teaspoon salt – 2 very ripe bananas peeled – 1 cup whole milk (240ml) – 1 large egg – 3 tablespoons unsalted butter melted, plus more for the pan – 1 teaspoon vanilla extract

 INSTRUCTIONS

In a large bowl, mix the flour, sugar, baking powder, and salt together using a whisk. Then, set the bowl away.  

Step 1

Leave some chunks of banana in a different bowl as you mash the other bowl's bananas. Put in the vanilla, milk, egg, and melted butter.  

Step 2

Add the wet mixture to the dry mixture and mix it in just a little. (a few bumps are fine!) Open up a big pan or grill and set it on medium heat. Add a little more butter or vegetable oil to grease.   

Step 3

Cook pancakes in batches, adding ¼ cup of batter per pancake, until golden brown and bubbles form on top, 2 to 3 minutes. Flip and cook another minute until bottom is golden brown.  

Step 4

Keep making pancakes, adding butter to the griddle between batches. Serve heated pancakes with banana slices, maple syrup, and butter.
