The sauce for this Dairy-Free Chicken Broccoli Alfredo Bake is made from cashews, and the penne pasta is gluten-free. A tasty gluten-free meal!

– Gluten-free penne pasta– Onion– Chicken breast or thigh– Frozen broccoli– Alfredo sauce– Olive oil– Garlic– Red pepper flake

Make your dairy-free Alfredo sauce and put it aside when you've finished.

Follow the directions on the package to cook the penne pasta until it's al dente. Then, drain the pasta and set aside ¼ cup of the pasta water. Do not use the pasta water.

In a big pot or Dutch oven, heat oil on medium while pasta cooks.

Add the onions and toss periodically until softened.Add garlic and mix.

Add tiny chicken bits and brown. Then add broccoli, salt, pepper, and chili flakes.Heat broccoli and cook chicken till done.

Add the pasta water that you saved to the Alfredo sauce and mix it in. Put the pasta in the pan first, then the Alfredo sauce. Mix to cover.

Place mixture in baking dish. Cover loosely with foil and bake 10-13 minutes. Pasta bakes have golden brown tops and creamy inside.
