CREME BRULEE RECIPE

Maybe Crème Brulee is the classiest dessert. Creamy custard with crunchy brûléed caramel tastes and feels great! Hot, cold, crunchy, smooth—a treat! Many people avoid making this elegant French dessert at home because they think it's complicated, but it only takes four ingredients.

4

Remove lumps by sieving the mixture, but skip this step if the custard looks smooth. Pour custard into ramekins on a baking tray to make a water bath.

As you fill the tray, avoid spilling hot water into the ramekins. Water fills half the ramekins. Moving the tray without water on the oven rack is easier. Work fast to close the oven!

Depending on ramekin depth, bake 35–50 minutes. With set edges and wobbling middle, they're done. Let cool in water bath until you can remove them without burning your fingers after baking. Refrigerate the ramekins for at least 2 hours, preferably longer!

Before serving, generously sugar the creme brulee tops to hide the custard. 'Brulee' sugar until golden. Without a blowtorch, grill them in your oven at maximum heat and watch them to avoid burning.
