I originally planned to write about these cookies on Friday, but when I started writing today, I just wanted to talk about cookies. Since it's cold and snowy outside, talking about a green salad didn't seem natural. For snow days, try these healthy-ish cookies!
Ingredient
– 1 cup creamy peanut butter or almond butter– 8 ounces pitted medjool dates (1 cup packed dates)– 2 teaspoons vanilla extract– 1 egg– 8 ounces melted dark chocolate– Roasted peanuts, for topping (optional)

Start with a 350-degree oven. Parchment a baking sheet.
Mix peanut butter, dates, and vanilla in a food processor.

Mix until no big dates remain. Put the egg in and pulse. Roll 14-15 dough balls and set on baking sheet.

To flatten and cross hatch each dough ball, lightly press with a fork. Transfer to oven and bake 9-10 minutes. Set a timer to avoid overbaking these cookies!

Remove cookies from oven and let cool. Freeze cookies for 10-15 minutes to ease dipping. Sprinkle peanuts on cookies after dipping them in chocolate.

Eat or allow the chocolate set and keep in an airtight jar for 4 days. Enjoy!
