Chocolate Dipped Homemade Peanut Butter Samoa Oreo Cookies Recipe 

Note that just one of the four recipes does not contain peanut butter. I think peanut butter and Oreos go together like fries and ketchup or bread and butter. Everything about this peanut butter/Oreo thing comes from The Parent Trap. The cute Lindsay Lohan dipping her Oreos in peanut butter inspired me to do the same. 

Ingredient

COOKIES – 1 cup unsalted butter melted and slightly cooled – 3/4 cup sugar – 1 tsp vanilla extract – 1 cup semisweet chocolate chip – 1 egg – 1 1/2 cups unbleached all-purpose flour – 3/4 cup cocoa powder – 1 tsp kosher salt – 1/2 tsp baking soda – 3/4 cup creamy peanut butter – 12 ounces melted chocolate optional CREAM FILLING – 1 stick unsalted butter at room temperature – 1 1/3 cup powdered sugar – 1 teaspoon vanilla extract – 1/4 teaspoon salt COCONUT CARAMEL – 1 cup brown sugar – 3/4 cup canned full-fat coconut milk – 1 tablespoon unsalted butter – 1 tablespoon vanilla extract – 3 cups shredded coconut

Melt butter and chocolate chips in a medium microwave-safe bowl, stirring every 30 seconds. Add sugar and mix well. Add vanilla and stir. Finally, mix in the egg.

Mix flour, cocoa, salt, and soda in another basin. Mix flour and chocolate. Mix until dough forms a firm. Place dough on wax paper. Shape into a 2-1/2-inch log.

Log along wax paper edge and roll. Roll to form a smooth cylinder. Twist paper ends to secure and compact shape. Put in the fridge for two hours to firm up.

To keep the log circular, rotate it every 15 minutes if it flattens. Make the cream filling while the dough chills.

Beat butter till creamy in a mixer. Beat sugar, vanilla, and salt until smooth. Cover and wait to assemble cookies.

Turn on oven to 325 degrees and line baking sheet with parchment. Cut the dough into quarter-inch slices and lay on the baking sheet (slice them thinly to avoid giant Oreo Sandwiches).

Bake cookies for 12-18 minutes until hard. Since they're dark, it's hard to tell if they're done by appearance. Thin biscuits take 12-15 minutes, while thicker ones need 18-20.

While cookies cool, create coconut caramel. Stir all ingredients except the toasted coconut in a medium saucepan over medium-low to medium heat. Whisk gently for 5–7 minutes to thicken.

Stir in toasted coconut after turning off the heat. Spread coconut caramel on half the cookies to assemble. Spread cream filling on remaining cookies.

Put peanut butter on coconut caramel. Peanut butter/coconut cookies and sandwich cream. Dipped cookies in melted chocolate on a waxed paper-lined baking sheet can be refrigerated to harden. Store cookies in an airtight, cool, dry container.
