I need a good shortbread recipe as a Scot! I love this chocolate chip shortbread because it's everything a biscuit should be. They're crumbly and melt in your mouth with a slight crunch. Buttery shortbread and semi-sweet chocolate chunks make it luxurious.
Ingredient
– 1.5 cup All-purpose Flour 225g– 1 cup Butter 227g– ½ cup White Sugar 100g– ½ teaspoon Baking Powder– ½ teaspoon Salt– 1 cup Chocolate chunks 170g
Direction
1
Warm the oven up to 300°F and put parchment paper on a baking sheet.
2
Mix the sugar and butter together until it's fluffy and light.
½ cup white sugar and 1 cup butter
3
Just until everything is mixed together, add the dry ingredients. Don't mix it too much; just mix it until it comes together 1.5 cups of all-purpose flour, 1/2 teaspoon of baking powder, and 1/2 teaspoon of salt
4
Add the chocolate and mix it in slowly.
1 cup of chocolate chunks
5
On a floured surface, roll out the dough and cut it into shapes you want.
6
For 10 to 15 minutes, bake them. They won't be golden brown, so they'll still be pretty pale when they're done.
7
As soon as you take it out of the oven, sprinkle it with a lot of sugar. Tap off the extra sugar after they have cooled.
