Chewy Chocolate Chip Cookie Granola is a new kind of cookie to welcome Tuesday. Some might call this granola a cookie, but it tastes like an oatmeal cookie that has been broken up, and it is so good.
Ingredient
– 1 cup old fashioned oats– 1/2 cup cooked quinoa– 1 cup raw almonds, roughly chopped– 1/2 cup raw sunflower seed– 1/4 cup raw pumpkin seed– 1/4 cup raw sesame seeds– 1/4 cup chia seed– 4 tablespoons salted butter– 1/2 cup + 2 tablespoons honey– 2 teaspoons vanilla extract– 1 cup semi-sweet or dark chocolate chips

Preheat oven to 275úF. Roll parchment paper on a baking pan.

Mix oats, quinoa, almonds, sunflower seeds, pumpkin seeds, sesame seeds, and chia seeds in a big bowl.

Butter and 1/2 cup honey melt. Add vanilla. Pour mixture over muesli and mix well. Arrange evenly on the baking sheet.

Place in oven for 20 minutes. Stir and drizzle the remaining 2 tablespoon honey over the granola after baking.

Rebake for 10–15 minutes until brown. Remove from oven and cool 15-20 minutes. Add chocolate chips. In an airtight container, store for 1 month.
