Chewy Chocolate Chip Cookie Granola Recipe

Chewy Chocolate Chip Cookie Granola is a new kind of cookie to welcome Tuesday.  Some might call this granola a cookie, but it tastes like an oatmeal cookie that has been broken up, and it is so good. 

Ingredient

– 1 cup old fashioned oats – 1/2 cup cooked quinoa – 1 cup raw almonds, roughly chopped – 1/2 cup raw sunflower seed – 1/4 cup raw pumpkin seed – 1/4 cup raw sesame seeds – 1/4 cup chia seed – 4 tablespoons salted butter – 1/2 cup + 2 tablespoons honey – 2 teaspoons vanilla extract – 1 cup semi-sweet or dark chocolate chips

Preheat oven to 275úF. Roll parchment paper on a baking pan.

Mix oats, quinoa, almonds, sunflower seeds, pumpkin seeds, sesame seeds, and chia seeds in a big bowl.

Butter and 1/2 cup honey melt. Add vanilla. Pour mixture over muesli and mix well. Arrange evenly on the baking sheet.

Place in oven for 20 minutes. Stir and drizzle the remaining 2 tablespoon honey over the granola after baking.

Rebake for 10–15 minutes until brown. Remove from oven and cool 15-20 minutes. Add chocolate chips. In an airtight container, store for 1 month.
