Brown Sugar Snack Cake With Dulce De Leche Frosting Recipe
This easy snack cake with its ridiculously simple and rich frosting is a celebration of the delicious simplicity of brown sugar.
INGREDIENT
FOR THE CAKE:
– 1 & 1/2 cups (180g) all-purpose flour
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 1/2 cup (113g) unsalted butter, softened
– 1 cup (200g) packed light brown sugar
– 2 large egg
– 1 teaspoon vanilla extract
– 1/2 cup (113g) sour cream
– 1/2 cup chopped nut
– 1/2 cup butterscotch chip
FOR THE FROSTING:
– 6 ounces (170g) dulce de leche (a generous 1/2 cup)
– 4 ounces (113g) cream cheese, at room temperature
– 1 teaspoons vanilla extract
MAKE THE CAKE:
Preheat oven to 350°F. Parchment an 8-inch baking pan. Grease paper and pans. Grease the pan instead of lining.

Grease the pan instead of lining. Mix flour, baking powder, and salt. Set aside.
Step 2
Beat butter and brown sugar until fluffy with a medium-speed electric mixer. After adding each egg, mix well. Mix in vanilla.
Step 3
Lower the mixer speed. Three portions of flour mixture and two portions of sour cream are added. Mix until combined or flour streaks remain.
Step 4
Mix nuts and butterscotch chips. Place batter in pan and spread evenly. Bake 30–35 minutes until a pick inserted into the centre comes out clean.
Step 5
In the pan, cool on a wire rack for 15 minutes. Use the parchment overhang to cool on a wire rack.
Step 6
Make the frosting by mixing dulce de leche, cream cheese, and vanilla in an electric mixer on medium speed until smooth.
Step 7
Frost the cooled cake. Sprinkle reserved pecans on cake.
