Best Traditional Italian Wedding Soup (Easy Recipe)

FOR THE MEATBALLS– 1 pound ground turkey– ½ cup bread crumb– 2 teaspoons garlic – 4 tablespoons flat leaf parsley– ¾ cup freshly grated Parmegiano-Reggiano– 4 tablespoons whole milk – 1 egg – Season with kosher salt and freshly ground black pepper

FOR THE BROTH– 3 tablespoons extra-virgin olive oil– 1 cup finely chopped yellow or sweet onion– 1 cup finely chopped carrot– 1 cup finely chopped celery– 8 cups chicken broth– 2 cups water– 1 large bay leaf – 1 cup small pasta– 4 cups chopped escarole – 3 cups fresh spinach chopped

Heat the oven to 400 F degrees if you are going to bake meatballs. Put parchment paper on a cookie sheet.

In a bowl, mix the ground turkey, garlic, parsley, Parmigiano-Reggiano, milk, egg, salt, and pepper with a fork. If the meatball mixture is too loose, add a little more breadcrumbs until it's set enough to roll into balls.

Scoop meatballs into 1/2” round balls with a small cookie scoop or Tablespoon. Place on parchment-lined baking sheet. Repeat to make all meatballs. Set aside. Bake meatballs at 400° F for 15 minutes.

Add a tablespoon of olive oil to a large skillet. When shimmering, add meatballs and brown (don't cook fully). Brown meatballs in batches for 2-3 minutes. Inside the soup, the meatball will finish cooking.

While making soup, drain meatballs in a paper towel-lined dish.While meatballs bake, heat olive oil in large pot on medium-low. When oil shimmers, add diced onions, carrots, and celery. Stir onion frequently for 8-10 minutes until softened and translucent.

Add broth, water, salt, pepper, and bay leaf.
Bring to boil. Put escarole in now. Reduce heat to medium. Escarole cooks quickly. No more than 15 minutes.

Add meatballs. Cook the pasta in a small pot of salted boiling water according to the box directions if not in the soup. Add cooked pasta to soup. Simmer until meatballs are done, 10-15 minutes.
