Best Pistachio Cookies Recipe

Our Pistachio Cookies are created with custard mix, which results in cookies that are chewy, delicious and soft. In addition, these cookies do not require chilling and can be prepared in only twenty minutes.  

– 2 cups all-purpose flour – 3.4 ounce package pistachio pudding mix – 1 teaspoon baking soda – 1/4 teaspoon salt – 1 cup unsalted butter softened – 1 cup granulated sugar – 2 large eggs – 1 cup white chocolate chips plus more for garnish – ⅓ cup shelled pistachios

Heat the oven to 350°F. Set aside parchment-lined sheet trays. Mix flour, custard mix, baking soda and salt in a large bowl.

1 teaspoon baking soda, 1/4 teaspoon salt, 2 cups all-purpose flour,3.4 ounce pistachio pudding mix.

Cream butter and sugar for 3 minutes in a stand mixer with the paddle attachment or a large bowl with an electric hand mixer.

Cup unsalted butter, cup granulated sugar Stir in eggs until blended. 2 big eggs Mix in the flour mixture until no dry spots remain.

Mix in pistachios and white chocolate chips. 1 cup white chocolate chips, ⅓ cup shelled pistachios.

Roll the dough into 1.5 tablespoon balls (I use a cookie scoop) and set them 2 inches apart on the prepared sheet tray.

Bake for 8-10 minutes until puffy and gently browned around the edges. Press in more white chocolate chips for garnish.

After 10 minutes on the sheet tray, move the cookies to a wire rack to finish cooling.
