Heat the oven to 350°F. Set aside parchment-lined sheet trays. Mix flour, custard mix, baking soda and salt in a large bowl.

Cream butter and sugar for 3 minutes in a stand mixer with the paddle attachment or a large bowl with an electric hand mixer.
Cup unsalted butter, cup granulated sugar Stir in eggs until blended. 2 big eggs Mix in the flour mixture until no dry spots remain.
Mix in pistachios and white chocolate chips. 1 cup white chocolate chips, ⅓ cup shelled pistachios.
Roll the dough into 1.5 tablespoon balls (I use a cookie scoop) and set them 2 inches apart on the prepared sheet tray.
