Donuts are usually fried, but this apple cider donut is delicious and easy to make. Non-cooking simplifies and cleans. Clean less, donut more.
– 2 cups fresh apple cider– 2 cups all-purpose flour– ¾ teaspoon baking powder– ¾ teaspoon baking soda– ¼ teaspoon fine salt– 1 teaspoon ground cinnamon– 1 pinch ground cardamom– 1 pinch freshly grated nutmeg– ½ cup white sugar– ½ cup packed brown sugar– ½ cup warm milk– 6 tablespoons unsalted butter, melted, divided– ¾ teaspoon vanilla extract– 1 large egg

Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Butter two donut pans with a capacity of six cups each.

Heat apple cider in a pot on medium. Watch the cider simmer to 1/2 cup. If it drops too low, add 1/2 cup water. Reserve until needed.

In a large bowl, combine flour, baking powder, baking soda, salt, 1 teaspoon cinnamon, cardamom, and nutmeg. Whisk till blended and reserve.

Mix 1/2 cup white sugar, brown sugar, milk, 2 tablespoons melted butter, vanilla essence, and egg in another bowl. Mix apple cider reduction with dry ingredients.

Fill about 3/4 of the way to the top of the donut pans with batter using a spoon or pastry bag.

In 10–12 minutes in the centre of the preheated oven, the donuts should spring back and have faintly golden tops. Transfer to a silicone-lined sheet pan after 10 minutes.

If desired, carefully brush the remaining melted butter over the donuts while they're still slightly warm.

Topping: mix 1 cup white sugar and 1 tablespoon cinnamon in a shallow dish; coat donuts. Let cool completely before serving.
