Apple Fritter Bread Recipe 

Fresh apples and cinnamon sugar are packed into and on top of this soft apple fritter bread. This simple fall quick bread recipe is great for breakfast, a snack, or dessert!

Cinnamon Sugar – 1½ teaspoons cinnamon – ⅓ cup brown sugar packed, light or dark Apple Filling – 2 cups apples about 2-3 medium apples, peeled, cored, and diced in small cubes, use Granny Smith and/or Honeycrisp or any baking apple – 1 tablespoon granulated sugar – 1 teaspoon cinnamon – ¼ teaspoon ginger optional BREAD – ½ cup unsalted butter room temperature – ¾ cup granulated sugar – 2 large eggs room temperature – 1½ teaspoons vanilla extract – 1½ cups all purpose flour – 2 teaspoons baking powder – ¼ teaspoon baking soda – ½ teaspoon salt – ¼ cup whole milk room temperature – ⅓ cup full fat sour cream room temperature Icing – ¾ cup powdered sugar – 1½ tablespoon milk or heavy cream plus more if icing is too thick – 1/4 teaspoon vanilla extract

Sugar and Cinnamon  Mix the brown sugar and cinnamon together in a small bowl. Put away.

Apple Filling Wash, peel, core, and cube apples. Mix them with sugar, ginger, and cinnamon. Set aside.

The Apple Bread  Heat oven to 350 F. For a 9x5-inch or 8x4-inch loaf pan, grease and line with parchment paper. Extra paper on two sides makes removing the bread easier after baking.

Set aside the dry ingredients after whisking them in a medium bowl. Mix butter and granulated sugar on medium speed in a large bowl or electric mixer for 2 minutes until light and fluffy.

Add eggs one at a time, then vanilla. Mix half the dry ingredients just till incorporated. Beat in the sour cream and milk. Mix the remaining dry ingredients just until incorporated.

Put half the batter in the pan. Scatter half the cinnamon apples on the batter. Scatter half the cinnamon sugar over the apples. Spread remaining batter on top. Cover with the remaining apples and cinnamon sugar.

Bake 45-60 minutes until a toothpick inserted in the center comes out clean. Let cake cool in pan for 10 minutes, then transfer to rack. If desired, ice after cooling.

Icing  Sift powdered sugar in a medium basin. Mix milk and vanilla using a whisk or spoon. Apply icing to the cooled cake and enjoy!
